Viji Varadarajan's Pitlai Podi

Ingredients:


3 cups coriander seeds

1 cup bengal gram

3/4 cup dried red chillis

1 1/2 tsp hing

2 cups grated coconut

2 tsp olive oil


Method:



  1. Heat a teaspoon of oil over medium heat. Roast the coriander seeds, bengal gram, red chillis (each one separately, or all together), and hing until they turn golden and aromatic. Remove to a bowl and set aside.

  2. Blend all roasted ingredients to a coarse powder. Store in an airtight container, and refrigerate.
